Ingredients (for 4 people)

12 loin lamb chops; spinach 800 g (frozen or cooked); 1 / 4 garlic cloves; 1 bunch of mint; 2 coffee cup pinenuts; 3 tablespoons of grated pecorino cheese; 8 tablespoons of extra-virgin olive oil; 1 lemon; salt & pepper

Procedure

Take the mint and make a pesto with the cheese, pinenuts, 1 / 4 clove of garlic and extra-virgin olive oil.
Grill the lamb, taking care not to overcook.
Place the cutlets on spinach stir-fried and sprinkled with lemon, placed in the middle of the plate.
Finish with salt, pepper and pesto sauce around and over the meat.
