The Recipes of Villa Campestri : Ravioli of Peposo with cream of sweet red onions | Print |  E-mail

This month, chef Roberto Zanieri, alias Jerry, has chosen for you a recipe a little more complicated but the result will leave your guests wordless: Ravioli of Peposo with cream of sweet red onion, a special dish of Villa Campestri Olive Oil Resort!

Ingredients for 8 people

For the peposo: 500 g of beef; 2 cloves of garlic; 2 glasses of red wine; salt; pepper; 1 tbsp cooking; 4 tablespoons tomato paste

For the pastry: 500 g flour; 5 eggs; a pinch of salt; 1 tablespoon olive oil

The cream of sweet red onion: 1 tablespoon flour; 5 medium onions; a tablespoon of olive oil

Procedure

For the peposo: Place all ingredients in a baking dish, preferably earthenware, for 4 hours at 120° until meat is tender, taking care to cover with aluminum foil or cover the pan throughout cooking.

For the cream: Soften the onions and add water, cook for 40 minutes and mix it with the blender.

For the ravioli: Roll out the pastry, place a spoonful of the center and make peposo "ravioli".

Cook for 4/5 minutes in salted water, place the cream on the bottom of the plate and lay it over the ravioli with parsley to decorate ... Buon Appetito!
