The history of olive oil in Tuscany: from sacred ointment to product of excellence

In Tuscany, the olive tree was considered sacred since Etruscan times, not only for religious reasons: the oil obtained was of great value and was exported throughout the Mediterranean basin. In Mugello, the cultivation of olive trees came later than the southern part of Tuscany, mostly because of the weather a little bit colder. In recent years, however, this type of cultivation has produced excellent results.At Villa Campestri Olive Oil Resort cultivation of olive trees dates back to at least the last century: among the historical documents preserved in the archives of the Villa there is one dated 1861, which lists the products of the valuable Roti Michelozzi farm (actually Villa Campestri), including stands out the extra-virgin olive oil.

With the purchase of the Villa by the Pasquali family in the early 90′s, olive cultivation has expanded and has become one of the main activities of the new Resort: every year we produce our olive oil, called “L’Olio di Cosimo“: to do it we personally cultivate our olive groves in an organic way, we proceed to the olive harvest in October and November and we process them in our mill.

Just careful production and processing: our olive oil bear every year the mark TREE, or Ethics Excellence and Economy, which attests the excellent quality, recently recognized in a Washington Post article.

In addition, to preserving the best characteristics of L’Olio di Cosimo and of all other oils for our olive oil tastings, we designed the patent OliveToLive: a machine that allows you to keep the oil under nitrogen while keeping intact the organoleptic qualities.
