For August our chef Roberto Zanieri, alias Jerry, introduces you a fresh and easy recipe with ingredients of season: it is the “Sushi of mountain: rolls of beef carpaccio with porcini mushrooms, arugula, walnuts and Parmesan”.
Ingredients for 4 people:
200 g of beef carpaccio; 3 young mushrooms; nuts; 2 bunches of arugula; Grana Padano; salt and black pepper
Spread on a nonstick sheet of paper the beef carpaccio.
Place in the center a salad of porcini mushrooms stems, walnuts, arugula and Parmesan cheese.
Roll the carpaccio like a sushi roll.
Arrange on serving plate arugula and parmesan shavings.
Cut the roll into rolls and garnish with thin slices of porcini mushrooms chapels.
Of course, end up with plenty of extra-virgin olive oil!
