Le Ricette di Villa Campestri: Agnello Scottadito

altSe vi piace l’agnello, la ricetta di ottobre di Villa Campestri Olive Oil Resort è quello che fa per voi: chef Jerry ha scelto infatti “L’Agnello Scottadito”.

Ingredienti (per 4 persone):

12 costolette d’agnello nella lombata; 800 g spinaci (surgelati o cotti); 1/4 spicchio d’aglio; 1 mazzetto menta; 1 tazzina caffe’ di pinoli; 3 cucchiai di pecorino grattugiato; 8 cucchiai olio e.v.; 1 limone; sale pepe q.b.

Procedimento:

Prendere la menta e fare un pesto con il formaggio, i pinoli, 1/4 di spicchio d’aglio e l’olio.

Grigliare l’agnello avendo cura di non cuocerlo troppo.

Sistemare le costolette pronte a raggiera sugli spinaci, saltati in padella ed irrorati di limone, disposti nel mezzo del piatto.

Finire con sale, pepe ed il pesto intorno ed un po’ sopra la carne.
