3 Tuscan Summer Dishes We Adore

Our foodie philosophy at Villa Campestri Olive-Oil resort is using olive-oil as our gastronomic center. Rather than try and include everything on the menu, we try and focus on dishes we do best, with an innovative and fresh twist from our young & very talented chef.

We change our menu every season, adding ingredients that inspire us from around our abundant park and garden surrounding the estate. Even if the weather is definitely flip-flopping this July, we still embrace a summer menu that includes a lot of fresh seasonal vegetables, lighter fare that will fill any hungry stomach without feeling heavy, plus we like to leave a little room for dessert.

Part of any vacation is the meals you share together, time spent putting everything else aside, stress from work, your beeping smartphone to actually sit down and linger over a long meal that awakens the senses. Below is a small example of just some of the dishes we serve at our in-house restaurant. Come visit us today and enjoy what foodie’s in Tuscany have been raving about. Summer dishes that will blow your mind! 

Melon and salty prosciutto slices. Seems almost too simple, but it really isn’t. The key here is the freshness of the melon and more importantly, the quality of the prosciutto, something that we pride ourselves on.

A fresh beef tartare made with seasonal vegetables and topped with extra-virgin olive oil, a refreshing meal for hot, humid days and the thought of something heavy makes you want to skip dinner. We promise you this is a dish that begs you to come back for more!

Bruschetta in ‘three moves’ , a previous recipe we placed on the blog  and one that meshes perfectly with summer. Tomatoes three different ways, all unique, all bursting with flavor.
