Respect for nature also means respect of the ingredients we propose to our Guests in our restaurant The Olivaia. Always in fact the focus on the quality of the food prepared by our chef, Roberto Zanieri, begins with the choice of the ingredients in his dishes: it refers only to products grown in our Resort or surrounding area, the Mugello.The Olivaia is therefore a real restaurant at km 0 that allows us not only to achieve genuine and tasty food but also help the environment by reducing emissions pollutants from vehicles, as well as promoting local economic development.
In our courses you will find the meat of the farmers of Mugello, the vegetables grown in our garden, the fruit that comes from the cultivation of Marradi and honey bees bred in our oak woods.
Undisputed star of our table is obviously the extra-virgin olive oil we produce in-house, through the ancient olive trees that surround the villa and that are grown in a completely organic and biodinamic.
The specialties of Tuscan extra-virgin olive oil is characterized by intense and persistent flavor, with hints of artichoke and almond, and represents the special ingredient of the creations of our chef. Its organoleptic properties are also maintained the same through the machine of our invention OliveToLive.
