The olive tree is an essential part of the Tuscan landscape.
Olive cultivation has always been present in Tuscany, evolving over time to obtain an oil of great quality. Food, landscape, civil, cultural and religious life are indissolubly linked to this product which, through centuries of history, today represents a typicality of this land.
However, the Tuscan olive oil supply chain is complex: from the olive groves of the provinces of Florence, Siena and Arezzo, mainly reconstituted after the frost of 1985, to the tall and dense olive groves of the Monti Pisani or Versilia, to the large plants of the Maremma.
The olive oil is a symbolic product for Tuscany, to such an extent that the olive oil sector covers:
All this gives rise to an average annual production of 170-180.000 quintals of oil from olive groves located mainly in the hills.
Since 1998 the IGP brand “Tuscan extra virgin olive oil” has been active, to which some DOP have been added for extra virgin olive oils: “Chianti Classico”, “Terre di Siena” and “Lucca”.
Each oil is linked to its own territory and to the olive varieties used.
The regional olive oils are traditionally obtained from a mixture of olives of different varieties, normally present jointly in the olive groves, with the exception of DOP Seggiano extra virgin olive oil, which derives mainly from olives of the Olivastra Seggianese variety, typical of the production area.
Recently the production of oils deriving from olives of a single variety is spreading (mono-varietal oils).
The regional olive-growing heritage is made up of over 15 million plants, of which more than 90% consist of a few varieties: Frantoio, Moraiolo, Leccino, Maurino, and Pendolino. In the Tuscan olive groves there are also numerous other minor varieties that have been surveyed and studied through extensive investigations.
