The Art of preparing preserves is an ancient Tuscan activity that even today is passed down from generation to generation. The reason is simple: during those months when nature seems asleep, preserves reawake the sensations that the warm seasons give us.

Just imagine opening a jar of pesto in winter and smelling the intense aroma of basil in the summertime. Or imagine serving bell pepper preserves: an explosion of greens, reds, and yellows will decorate your dish and exalt the flavor of a simple slice of Tuscan bread that was baked in a wood-fired oven.

The Preserves that We Will Learn to Prepare.

You will explore three different methods for preserving tomatoes and will learn to prepare:

  • Tomato puree (aka passata di pomodoro)
  • Tuscan tomato sauce (aka pomarola toscana)
  • Fresh bottled tomatoes

Basil, a fresh breeze of flavor.

You will learn to prepare an exceptional basil pesto by carefully following what Tuscan tradition requires: pine nuts, Tuscan pecorino, parmigiano reggiano, a pinch of salt, and lots of extra virgin Olive Oil.

Seasonal vegetables. The sun of the vegetable patch brightens your table.

You will learn to prepare seasonal vegetable preserves and will discover the advantages of procedures in which vegetables are either blanched or grilled. You will also learn to preserve them correctly in Olive Oil in order that their flavor will remain intact for a long time.

Participants can practice all of the aspects of the preparation of these dishes during the lessons. Minimum 2 participants.

The cost is € 120.00 per person and includes the tasting of a first course prepared with a preserve of the lesson.
