It might only be February but due to unseasonably warm weather, Italians are enjoying a very ‘spring-like’ winter season this year. One of the many advantages of living in such a diverse region as Tuscany, is that visitors have access to many, gorgeous parks – full of history and which also make the perfect place for an afternoon picnic.

A simple Tuscan egg recipe you won’t forget

Fried egg with emulsion of oil and vinegar and Tarese (leaner large slice of pancetta) – Photo-recipe from Chef Marco Stabile presented at Villa Campestri Olive Oil Resort, 26 October 2013.

Recipe is for one serving.

Fresh olive oil 
1 fresh organic free-range egg
3 slices of Tarese pancetta sliced very thinly
1 bottle of apple cider vinegar
